{Recipe} Chicken Shawarma with Crunchy Vegetables

 

I loved this dinner! It was so fun to incorporate new flavors into the week. Flavors of turmeric, cardamom, cinnamon..... I modified a recipe I found on Bon Appétit. 

TIP: To make this so so easy, buy a rotisserie chicken from the supermarket! Pull apart all the meat and then begin the recipe.

On the side:

1) Beautiful matchstick crunchy veggie slaw. I loved the thinly sliced radish- it adds such a bright color to the dish.

2) Garlic lemon Greek yogurt topping (I'm dairy-free, but my family loved it!)

3) (Not in the recipe) Saffron rice with soaked golden berry blend (cranberries, golden raisins, blueberries).  You can follow this recipe linked here. 

Pro Tip:

*Make this gluten-free, by making a rice, chicken, & veggie bowl- no pita!

*Use the leftover rice for meal prepped lunches

* I took my meal-prepped crockpot chicken and added these warm spices. It made my lunches so fun!
